Yuri is the Washoku Lovers representative, who also gained a qualification in nutrition in Japan who specialises in macrobiotics and is a sommelier of fruits and vegetables. She also worked at ABC Cooking School in Japan where she trained young women to cook as part of a homemaking lesson.

Assistant: Kayla


Kayla is the resident Washoku Lovers blogger who also loves to cook, she will help all the attendees so you don’t need to worry about not knowing how to cook!

Organic Japanese soybeans grown in Australia

- Reproducing the Japanese Taste -

The soybeans at Healthy Pulse are produced at an organic farm in Byron Bay and they aim to make beans with the same qualities as Japanese beans. It’s essential to have water and nigari to make delicious tofu so a water purification system which removes impurities, like chlorinated lime, was ordered from Japan. There are a number of coagulating agents that can be used to make tofu and they are carefully selected, for example nigari from the Israeli Dead Sea, and they combine with Japanese ingredients to make a delicious tofu.

• Hot miso soup with silken tofu
• Pan-fried Gyoza with Japanese firm tofu and garlic mushroom
• Tofu and avocado dip and crunchy tofu canapé
• Soymilk chawanmushi (Japanese steamed egg custard)

★Vegetarian friendly (no meat used but dashi stock does have katsuobushi fish flakes in it)
★Using only carefully selected organic ingredients (some of the imported products from Japan are not organic)
