Mazesoba まぜそば or ‘mixed noodles’ is a Japanese noodle dish that shed its broth and comes with an umami soy based sauce. At IIKO, our noodles are made in-house daily using a recipe that our Ramen Sensei passed down to us. Our thick, chewy noodles are served with a special soy tare, and come with various toppings such as 4-hour pork belly chashu, sous vide egg, nori, green onions and ajitsuke menma.
To enjoy, you just add a couple of swirls of chilli oil and kombu vinegar, mix it up and slurp!
IIKO’s mission is to specialise in mazesoba and bring this Japanese food experience to our local community.
