Busshari have made a few subtle changes in recent weeks. They’ve added a grill section to their counter, where you can watch the chefs make yakitori, they’ve also changed the styling of their Chef’s Selection Sashimi (full size $38, or half size $19), and finally the Washoku Lovers Member Benefit has been updated too! A 300mL Sakura Masamune Sake (Kyokai Ichigo Koubo) is available for half price (from $26 to $13) for Washoku Lovers Members. The Kyokai Ichigo Koubo sake is brewed using the classic Kimoto method (lactic acid is not added as an ingredient but rather the liquid is brewed for longer to allow it to develop the acid on its own) using a recipe that’s over 100 years old. It has a full-bodied and sharp taste, 80% polished rice, and a sake meter value of +1.5 giving it more of a dry flavour.
It pairs extremely well with fish, so it goes without saying that you should order it alongside the Chef’s Selection. A huge boat is filled with ice, covered with bamboo leaves, and then your sashimi selection is beautifully displayed on top. The serving style has been revamped in line with the warmer weather as we head into Summer.
On your plate you’ll find ocean trout, tuna, kingfish, snapper, a scallop, scampi, and imperader. Personal favourites were the kingfish and imperader, which was lightly seared for a smokey flavour. The lemon slice between the scallop also adds a touch of zest. You’ll also find several garnishes, including decorative vegetables and seaweeds, each with their own distinct flavour, and we recommend you try them! In Japan, garnishes are eaten and used functionally – to avoid putting too much soy sauce on your sashimi, simply dip some of the garnishes into the soy sauce and then brush it over the fish for the perfect balance of flavours.
For other menu options, try the Seared Beef Wagyu Nigiri (2pcs $9) or Toro fatty tuna (2pcs $12). A new menu selection is also rolling out soon for the recently installed grill. You might also be lucky enough to grab some of the super popular Japanese whisky at Busshari, with both Yamazaki 12yrs and Hakushu 12yrs available (for now!).
Busshari is a dynamic restaurant with several dining areas. The counter is fun and exciting, perfect for friendly catch ups. Just behind it are more intimate tables with moody lighting – try bringing a date here! There’s also larger tables towards the front for casual group dinners, and if you love the food but don’t want to go out, that’s not a problem because Busshari offer take away.
